Big Boy Nachos

Ingredients

White and Blue corn tortilla chips

Sour cream

Chicken breast

BBQ Sauce

Grated Cheddar

Grated Monterey Jack

Quesa Fresco

Tostitos Salsa Con Queso

Green Onions

Cilantro

Soft Corn Tortillas

Refried Beans

Jalapenos

Sour Cream

Directions

1. Mince the cilantro and jalapeno

2. Thinly chop the green onions

3. Preheat the oven at 450

4. Lay out the white and blue tortilla chips on a baking sheet

5. Slice the soft corn tortillas and place them in the oven for 5 minutes

6. Salt and pepper the chicken, and grill or slice and cook in saute pan

7. Dice the chicken and mix with BBQ sauce

8. Heat the refried beans in the microwave

9. Spread the refried beans, chicken, cilantro, and jalapeno on top of the tortilla chips

10. Sprinkle a moderate amount of grated cheddar over the top

11. Add a layer of tortilla strips

12. Sprinkle a moderate amount of grated monterey jack over the top

13. Add small amount of diced queso fresco over the top

14. Heat the Tostitos salsa con queso in the microwave and spoon a moderate amount over the top

15. Place in oven until cheese is golden brown.

16. Sprinkle green onions over the top and diced tomato optionally

17. Serve with sour cream and fresh guacamole if you so choose.

Grilled Fajitas

Ingredients

Flour tortillas

Chicken or Steak

Fajita Seasoning

Red Onion

Green Pepper

Red Pepper

Sour Cream

Salt and Pepper

Olive Oil

Directions

1. Preheat Grill on high

2. Salt and Pepper the Chicken or Steak, then apply generously the fajita seasoning as a rub.

3. Brush the Red Onion, and the Green and Red Peppers with Olive Oil.  Salt and pepper them.

4. Grill the chicken or steak and vegetables over high heat.  Flip these ingredients once when they have some nice looking grill marks on them.

5. Slice all of the ingredients and leave the grill on.

6. Grill the tortillas for 45 seconds on both sides. 

7. Build your fajita and add sour cream.

Southwestern Salad

Ingredients

4 Corn tortillas

Corn

Cilantro

Green onion

Chicken Breast

Taco Seasoning Packet

Boston Bibb Lettuce

Tomatoes

Avocado

Balsamic Vinagrette

Directions

1. Preheat Grill on high

2. Preheat oven on 300 degrees

3. Salt and Pepper the Chicken, then apply generously the taco seasoning as a rub.  Cook on the grill.

4. Slice the corn tortillas into thin strips, then bake until crispy

5. Either grill or steam the corn, then cut off the cobb

6. Dice the tomatoes, dice the Avocado, thinly Slice the Green Onion, mince the Cilantro

7. Arrange a bed of roughly chopped Bibb Lettuce.

8. Dice the chicken into large chunks or slice into strips and add to salad.

9. Add the tomato, avocado, corn, green onion, and cilantro. 

10. Add dressing

11. Top with tortilla strips

Easy Asian Buffet

Ingredients

Asian Noodle Package (your choice)

Instant White Rice

Asian Salad Mix

2 Filet Mignons

Teriyaki Sauce

1 box sliced white mushrooms

Salt and Pepper

Olive Oil

1 green onion

Directions

1. Preheat Grill on high

2. Salt and Pepper the Filet Mignons, then soak in Teriyaki for 30 minutes

3. Add a moderate amount of oil to a wok or large saucepan on medium heat and cook the mushrooms until soft and delicious.

4. Put the Filet Mignons on the Grill, after 8 minutes flip and drizzle teriyaki over the top of the steaks.  Cook for 8 more minutes or until you anticipate they are cooked Medium.  Set aside to rest for 5 minutes.

5. Prepare the noodles according to the instructions on the package.

6. Prepare the rice according to the instructions on the package.

7. Prepare the salad according to the instructions on the package

8. Thickly slice the filet mignons and arrange on a platter surrounded by the sautéed mushrooms

9. Thinly slice the green onions and place on top of the steak and mushroom platter

Supreme Pizza

Ingredients

Pre-made pizza dough (by the cookie dough)

Tomato Sauce

Mozzarella Cheese

Parmesan Cheese

Stick of Pepperoni

1 Green Pepper

1 Box sliced white mushrooms

Directions

1. Pre-heat the oven at 400 degrees

2. Lay out the pizza dough on a cookie sheet

3. Add Salt, Pepper, and Crushed Red Pepper to the surface of the dough

4. Spread tomato sauce

5. Cut slices of mozzarella and spread over the emerging pie

6. Cut Pepperoni, Green Pepper, and Mushrooms into equal, marble sized chunks

7. Spread toppings over the pie

8. Sprinkle Parmesan cheese on top

9. Bake in oven for 20 minutes or until crust is golden brown

10. Enjoy

Crispy Minute Fries

Ingredients

10 Fingerling Potatoes

Olive Oil

Salt and Pepper

Parmesan Cheese

Directions

1. Pre-heat the oven on broil. 

2. Slice the potatoes into steak fry sized pieces. 

3. Pre-cook the fingerling potatoes in the microwave for 8 minutes on high. 

4. Toss in a bowl with olive oil, salt, pepper, and parmesan cheese. 

5. Lay out in a single layer on a baking sheet. 

6. Broil in oven 10 minutes or until golden brown, flip if you are feeling aggressive.

7. Enjoy.
